What is a green bean?
A green bean is an unroasted "raw" coffee bean.
How long do green beans last?
The average shelf life of a green bean is 2 to 10 years depending on country of origin.
What does fair trade mean?
Fair trade means that farmers (not middlemen) receive a fair price for the coffee they grow. At present, millions of small farmers live in poverty due to exploitative trade practices in the industry.
What is the definition of fresh coffee?
For coffee to be fresh and best, it is recommended that it be consumed within 5 days after roasting, 3 hours after grinding and 15 minutes of brewing. The first sign that coffee is stale is a bitter taste!
What is a blend?
A blend is a mixture of beans that a coffee roaster will create to blend different flavor profiles together.
What determines degree of roast?
Degree of roast is a function of the internal temperature achieved by the coffee bean during roasting. For example, 450°F = light roast, 460°F = medium roast, and 470°F = dark roast.
What degree of roast produces optimum flavor?
Degree of roast is a personal preference. A medium roast produces the highest concentration of coffee oils and reveals the widest flavor profile unique to country of origin.

Caffeine

How is caffeine removed from coffee?
Caffeine is removed from the green beans prior to roasting. There are three methods used to decaffeinate coffee: (1) Methylene Chloride and Variations (chemical); (2) Swiss Water (natural); and (3) CO2 (natural). All remove 99% of the caffeine. CO2 and Swiss Water are better at maintaining coffee quality.
What type of coffee has the most caffeine?
Caffeine content in coffee depends on the type of bean and the method of preparation. Robusta beans contain more caffeine than Arabica beans. Dark roasted beans contain less caffeine than light roasted beans because the roasting process reduces the caffeine content of the bean.
Does brewing affect caffeine levels?
Yes, espresso contains less caffeine than coffee brewed in an automatic drip maker which contains less caffeine than coffee brewed in a French press.

Brews, Grinds, and Beyond

Are there any similarities between green tea and fresh roasted coffee?
Yes, fresh roasted coffee - like green tea and fresh fruit - contain beneficial antioxidants equivalent to the power of three oranges per cup.
How is iced coffee made?
Iced coffee is made by using a Toddy Maker. In a container, a coffee blend is soaked in water overnight. The following morning, the container's plug is removed from the bottom and the liquid coffee drips into a jar. The coffee is refrigerated and is good for a week.
What is an espresso bean and/or espresso roast?
There is no such thing as an espresso bean or espresso roast. Espresso can be made with Robusta or Arabica beans from any country of origin. Degree of roast is a personal preference. For example, espresso in northern Italy is made from light roasted beans vs. dark roasted beans in southern Italy.
How are flavored coffee beans made?
Flavored beans are made by coating the coffee bean with flavor compounds to supplement coffee beans' natural taste.
